El trompo
What makes it al pastor.
Al pastor is meat stacked on a vertical spit, the trompo, and cooked as it turns. The outside edges crisp up, and the cook shaves thin slices straight onto the tortilla.
At Del Sol the trompo is marinated beef and pork, and it turns where you can see it, right by the window. It is the same family kitchen that has been running on Park Place since 1982, cooking from Mamá Consuelo’s recipes.
